UnPlugged Challenge

I'm very excited to take part of Unplugged Group Project! I just decided about an hour ago to join this group! I'm always looking for ways to engaged the children. My hubby just bought me a brand new oven. I love my new stove/oven. My oven light works, all the burners work, and all the buttons function. Leah couldn't resist the pumpkin pie mix. She was licking the bowl clean. Hopefully, the pie will be ready when Landon gets home from school.




Funny Note: I had the pie cooling on the stove. I was busy online looking up something. I walked into the kitchen and Leah had pushed a chair right up agaisnt the stove. She had taken several finger licks on the pie. I guess she couldn't wait for dessert.

Even Funnier Note: I moved the pie to a different location. I thought it was safe. Nope! This time the little girl was prepared. I caught her with a pink plastic plate and a fork. She was literally scooping the pie unto her plate. That must of been one good pie...

Libby's Pumkin Pie
Ingredients:

3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
1 unbaked 9-inch (4-cup volume) deep-dish pie shell
Whipped cream (optional)


Directions:
MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

POUR into pie shell.

BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

Quincy has been climbing up on the counters a ton lately too, to get to things I "hide" from her up there. It's driving me nuts!
